Delicious Seasonal Recipes to Enjoy this July

Clafoutis (Traditional French Cherry Cake)

Who doesn't love a French recipe? This rich clafoutis is basically a better, fancier baked cherry tart. Sprinkle with almonds, and enjoy a slice of this deliciously smooth and creamy dessert this July. 

Ingredients (for 8 people):

  • 1 1/3 lbs. cherries weight for whole cherries, including pits, variety according to your taste. if you use sour cherries, add more sugar.
  • 4 eggs
  • 2/5 cups sugar + optional 1 tbsp brown sugar
  • 2/3 cups flour
  • 1 cup milk (or blant-based milk)
  • 3 tbsp butter + 1 tbsp butter (for greasing)
  • 1 pinch salt
  • 1 tsp powdered sugar

Instructions:

Preheat the oven to 350°F. Grease a cake pan with butter.

Melt the butter in a microwave

Using a blender, mix the eggs and sugar in a bowl. Sieve the flour into the bowl and add a pinch of salt. Pour in the milk and melted butter, and mix. 

Rinse and dry cherries and add them to the greased pan. Pour the batter over the cherries.

Bake for 30 mins. and generously sprinkle over the brown sugar. Turn the heat up by 20°F and bake for another 10 mins. This will caramalize the sugar. 

Once ready, allow to cool for 5 mins. and sprinkle with the powdered sugar.

Serve! We love to pair it with vanilla ice cream. Yum!

  6. Spread the avocado mix onto the toast. Enjoy!
