Chicken Alfredo Pasta

This creamy pasta is super comforting and full of nutrients, the perfect fit for a family dinner.

Ingredients (for 4 people):

  • 2 cups penne
  • 3 chicken breasts
  • 2 cups spinach
  • 1 cup cream
  • 1 cup cheese (Parmesan)
  • Salt and pepper (to taste)
  • 2 tbsp butter

Instructions:

  1. Cook the pasta according to package directions.
  2. Meanwhile, heat the butter in a frying pan, cut the chicken breasts into cubes and fry for 7 to 8 min., turning them from time to time.
  3. Then add the spinach and cook for a couple of minutes more.
  4. Strain the pasta reserving 1/2 cup of the cooking water and set aside.
  5. Add the cream, a little of the cooking water and the cheese to the pan, mix and season. Add a little more water if needed.
  6. Stir in the pasta, mix well and turn off the heat. Serve immediately.
