Carrot Soup

There is a soup that everyone likes, and it's actually very easy to make. That's right, we're talking about carrot soup! This version uses coconut milk which gives it an extra creamy touch.

Ingredients (for 4 people):

  • 2 medium potatoes
  • 6 medium carrots
  • 1 glug of oil
  • Salt and pepper (to taste)
  • 1 small can coconut milk
  • 1 cup water

Instructions:

  1. Peel and cut the vegetables into pieces.
  2. Heat a pot with a little oil and sauté the vegetables for about 4 minutes.
  3. Add the water and cook with the pot covered for 25 min., or until the vegetables are soft.
  4. Blend with an immersion blender, add the coconut cream and season to taste. Add a pinch of curry powder if desired.
  5. Lower the heat, cook for 5 more min., stirring occasionally.
  6. Enjoy!

  3. Fold up tortillas, and heat in a frying pan until golden.
