Peas with Bacon

This dish is so quick you won't believe it, especially because we are going to use frozen peas (although you can also use canned ones too). It's perfect as a side dish or as a main dish for the kids.

Ingredients (for 4 people):

  • 4 cups frozen peas
  • 6 slices of bacon
  • 1 onion (optional)
  • Salt and pepper to taste
  • Fresh mint leaves (optional)

Instructions:

  1. Boil the peas for 6 min.
  2. Meanwhile, dice the onion and bacon and sauté in a frying pan.
  3. Add the cooked and drained peas, stir and season to taste.
  4. Serve with finely chopped fresh mint.

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
