Cauliflower Crust Pizza

Cauliflower is a regular at the farmer's market during fall, and did you know you can make a delicious, gluten-free, low-calorie pizza crust with it? It's also great if you're practising a keto diet, and best of all, the crust requires only three ingredients.

Ingredients (for 4 people):

  • 1.5 oz. cauliflower (florets are best)
  • 1/2 cup shredded cheese
  • 1 egg 
  • 1 tsp Italian seasoning 
  • Salt and pepper
  • Kitchen towel

Instructions:

  1. Preheat oven to 400°F.
  2. Remove caulifower florets from the stem (you can also use frozen and thawed cauliflower florets). Using a grater or food processor, grate/break them down so that they resemble rice.
  3. Add the cauliflower rice to a microwave container and put in microwave for 5 min. to soften. You can also sauté the rice in a pan over medium-heat for 8 min. Once done, allow to cool.
  4. Place the rice onto a thin kitchen towel. Using the edges of the towel, make a little bag in order to drain the excess moisture from the rice. Squeeze as hard as you can but be careful, as the kitchen towel will be fragile. 
  5. Put the drained rice into a mixing bowl, and add the cheese, egg, and seasonings. Using your hands, mix everything together to form a pizza dough.
  6. On a baking sheet lined with parchment, press the dough down into an even circle with a diameter of 9-inches. 
  7. Bake for 25 min. until slightly golden, then remove from the oven. 
  8. Add the toppings of you choice, bake for a further 10 min., and enjoy!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
