The Cherry Pie from 'Twin Peaks'

A true dark humor classic, David Lynch's crime series, 'Twin Peaks' was a hit all over the globe.

Ficitionally famous for its cherry pie paired with a "damn fine cup of coffee", the popular coffee shop featured in the shop can be visited in real life, but we're sure you'd rather enjoy a slice of the action from the comfort of your own home. Here's how to make the show's cherry pie:

Ingredients (for 4-6 people):

For the crust:

  • 1/2 cup cold whole milk
  • 2 tsp apple cider vinegar
  • 2 2/3 cups flour
  • 1 1/2 tbsp sugar
  • 1 tsp salt
  • 1 cup + 2 tbsp butter (cut in cubes)
  • 1 large egg
  • 1/4 cup whole milk
  • Sugar (for sprinkling)

For the filling:

  • 8 cups cherries (fresh or frozen)
  • 1 cup sugar
  • 3 3/4 tsp cornflour
  • 1/2 tsp salt
  • 3 tbsp cherry-flavoured brandy

Instructions:

For the crust:

  1. Mix together milk and apple cider vinegar. In a large mixing bowl, combine flour, sugar, and salt.
  2. Add the cubed butter to the mixing bowl before slowing pouring in the combined milk and apple cider vinegar. Using a spoon, mix together until a dough forms. Once solid enough, knead the dough until a ball is formed.
  3. Split dough into two equal-sized disks and cover with plastic wrap. Refrigerate for 2 hours.

For the filling:

  1. In a medium-sized skillet, stir in cherries, sugar, cornflour, and salt. Cook over medium heat until the cherries begin to soften and glisten, and the cornflour and sugar dissolve. Reduce heat to medium-low, stir so that the cherries do not burn, and cook until the mixture thickens. 

To assemble pie:

  1. Heat oven to 400°F. On a floured work surface, roll out 1disk. Transfer to a deep-dish pie plate and chill in refrigerator. 
  2. Roll out disk number 2 and cut into 6 strips, approximately 5cm wide. Remove pie plate from refrigerator and pour in cherry filling. Weave dough strips over top. Seal and trim edges. 
  3. In a small bowl, whisk the egg and milk to make an egg wash. Brush crust with it, sprinkle with sugar.
  4. Place on baking tray and bake pie for 20 min. Make sure to rotate pie at 10 min. mark. 
  5. Lower heat to 360°F and bake for further 30 min.
  6. Remove from oven, allow to cool, and enjoy with a cup of coffee.
