When the character of Eleven in the Netflix show 'Stranger Things' discovers supermarket waffles, she doesn't want to eat anything else. We get it.
But did you know waffles are easy to make at home? You can also freeze them so a stock of delicious treats can be eaten from the comfort of your own couch whenever you fancy. Why not take three waffles with whipped cream layered in-between each waffle, and top with a handful of candy? That way you'll have your very own Triple-Decker Eggo Extravaganza.
Ingredients (for 10 waffles):
1/4 cup butter
1/2 cup sugar
4 drops vanilla extract
2 eggs + 1 egg yolk
2 cups flour
1 tsp baking powder
1/4 cup milk
Instructions:
Add the butter, sugar, vanilla, and eggs to a bowl. Mix using an immersion blender until frothy.
Add the sifted flour and baking powder. While stirring, add the milk little by little. Using the immersion bkender, mix for 3 min. at maximum speed. Let stand for 15 min.
Plug in the waffle iron and add half a laddle of mixture to each side of the appliance. Close and set the power regulator to medium. When the pilot light turns green, it will signal that the waffle is ready.
Remove to a wire rack or plate to cool.
Serve with the accompaniment of your choice.
If you want the freeze the waffles, wait for the to cool before storing in an airtight bag.
