Overcrowding the tray

Now that your cookie sheets are lined, make sure you don't overload them. The dough expands significantly during the cooking process, so the cookies need space to spread out, without sticking together. Overcrowding the tray also prevents hot air from circulating around the cookies, making it harder for them to get those beautiful crispy edges all the way around. For best results, keep them at least 2 inches apart.
