These Mistakes will Ruin Your Chocolate Chip Cookies

Forgetting to line your baking sheet

Always line your baking sheet with either parchment paper or a reusable silpat baking mat.  Cookies that are placed right on the hot baking tray have a tendency to burn on the bottom and are more likely to stick. Also remember that if you're using a dark baking sheet, the cookies will cook faster, so you'll need to adapt the original recipe instructions. To avoid overcooking, turn down the temperature by 25° and reduce the baking time by about 4 minutes.
