Almond Croissant with Frangipane Filling

Your stale croissants can instantaneously transport you to the winding alleyways of Paris with this almond croissant recipe. Filled with the traditional French frangipane that Europeans know and love, these luxurious treats are sure to please!

Ingredients (for 4 croissants):

  • 4 stale croissants, sliced horizontally
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 2 tbsp unsalted butter, softened
  • 1 large egg
  • 1/2 tsp almond extract
  • 1/4 tsp vanilla extract
  • Slivered almonds, for topping
  • Powdered sugar, for dusting

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, granulated sugar, softened butter, egg, almond extract, and vanilla extract. Mix until smooth and well combined to make the frangipane filling.
  3. Spread a generous amount of the frangipane onto the bottom half of each croissant. Be sure to reserve frangipane to top each croissant. This is essential to make your almonds stick!
  4. Place the top halves of the croissants back onto the filled bottoms to form sandwiches.
  5. Place the filled croissants on the prepared baking sheet. Brush each pastry with remaining frangipane and generously sprinkle with slivered almonds.
  6. Bake for approximately 10-15 min. or until the topping is golden brown.
  7. Remove the almond croissants from the oven and let them cool slightly on a wire rack.
  8. Once cooled, dust the almond croissants with powdered sugar. Serve warm and enjoy!
