Greek Yogurt Filled French Toast

This twist on a classic French toast recipe might just be your new favorite brunch item! Creamy Greek yogurt acts as a filling in this sweet croissant sandwich. Top with the fresh fruit, syrup, or honey to your liking. Feel free to get creative with what’s already in your pantry!

Ingredients (for 4 people):

  • 4 large croissants, sliced horizontally
  • 1 cup vanilla Greek yogurt
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • Butter or cooking spray, for cooking
  • Fresh fruit (such as strawberries, blueberries, raspberries, or sliced bananas), for topping
  • Powdered sugar, for topping 
  • Maple syrup or honey, for drizzling (optional)

Instructions:

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined to form your batter. 
  2. Heat a large skillet or griddle over medium heat and add a little butter or cooking spray to grease the surface.
  3. Dip each croissant sandwich into the French toast batter, coating both sides evenly.
  4. Place the dipped croissant sandwiches onto the hot skillet or griddle. Cook for 2-3 min. on each side or until golden brown and crispy.
  5. Once cooked, remove the French toast croissants from the skillet or griddle and place them on serving plates.
  6. Spread a generous layer of vanilla Greek yogurt onto the bottom half of each croissant. Top with the other half to make sandwiches.
  7. Top each French toast croissant with the fresh fruit of your choice.
  8. If desired, drizzle maple syrup or honey on top and serve immediately. Enjoy!
