Cheesy Spinach Croissant Bake

Nothing is more satisfying than a gooey, buttery casserole that’s a perfect addition to a hearty brunch. For those whose sweet tooth isn’t as strong, this savory option saves the day—and your day-old pastries! 

Ingredients (for 6-8 people):

  • 6 large croissants, preferably stale, torn into bite-sized pieces
  • 2 cups fresh spinach leaves, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup cooked bacon or ham for added flavor, chopped (optional)
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  2. Arrange the torn croissant pieces evenly in the prepared baking dish.
  3. Sprinkle the chopped spinach over the croissant pieces, followed by 1 1/2 cups of shredded cheddar cheese. If desired, scatter the chopped cooked bacon or ham evenly over the cheese.
  4. In a mixing bowl, whisk together the eggs, milk, heavy cream, Dijon mustard, garlic powder, salt, and pepper until well combined.
  5. Pour the egg mixture evenly over the croissant, spinach, and cheese layers in the baking dish. Gently press down on the croissants to ensure they are fully soaked in the egg mixture.
  6. Let the casserole sit for about 15-20 min. to allow the croissants to absorb the egg mixture.
  7. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
  8. Bake for 35-40 min. or until the casserole is set and the top is golden brown.
  9. Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. Slice into squares, serve warm, and enjoy!
