A vegetarian lasagna can be much quicker to prepare than a meat-based one, because the sauce won’t need as much simmering time. Roasted vegetables like aubergine, peppers, onion and even butternut squash work particularly well, but let yourself be guided by what’s in season and looks good (or needs using up in your fridge).
