Turkish Eggs

Many traditional Turkish meals make excellent brunch items, but this recipe is a simple and delicious way to impress Mom this Mother’s Day. Serve this classic dish with your favorite toasted bread for perfection in every bite!

Ingredients (serves 2 people):

  • 4 large eggs
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tbsp unsalted butter
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley or dill, chopped, for garnish
  • Red pepper flakes (optional, for added heat)
  • Sourdough bread or crusty bread, for serving

Instructions:

  1. In a small mixing bowl, combine the Greek yogurt and minced garlic. Season with salt and pepper to taste. Stir until well combined. Set aside.
  2. Bring a large saucepan of water to a gentle simmer over medium heat.
  3. Crack each egg into a small bowl or ramekin.
  4. Carefully slide each egg into the simmering water and poach for about 3-4 min. or until the whites are set but the yolks are still runny.
  5. Use a slotted spoon to remove the poached eggs from the water and drain them on a clean kitchen towel.
  6. In a small saucepan, melt the unsalted butter over medium heat.
  7. Once the butter is melted, add the paprika and ground cumin. Stir well to combine.
  8. Cook the spiced butter for 1-2 min. or until fragrant. Remove from heat and set aside.
  9. Divide the garlic yogurt among serving plates, spreading it out into a smooth layer.
  10. Place the poached eggs on top of the garlic yogurt.
  11. Spoon the spiced butter over the poached eggs, distributing it evenly.
  12. Sprinkle chopped fresh parsley or dill over the dish. If desired, sprinkle a pinch of red pepper flakes over the top for added heat.
  13. Serve immediately with Mom’s favorite bread! Enjoy!
