Lemon Poppyseed Loaf Cake

This lemon poppyseed loaf is just as stunning as it is delicious. Lemon and poppyseed go hand in hand as one of the world’s most beloved flavor combinations, but this recipe is anything but ordinary! Impress Mom with a moist and decadent cake loaf that’s decorated to perfection.

Ingredients (for 1 loaf):

For the loaf:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 tsp vanilla extract

For the glaze:

  • 1 cup powdered sugar
  • 3-4 tbsp fresh lemon juice
  • Zest of 1 lemon
  • Decorations: dehydrated lemon wheels, edible flowers, extra lemon zest 

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the sour cream, fresh lemon juice, lemon zest, and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake for 45-55 min. or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 min. Then transfer it to a wire rack to cool completely.
  10. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth. Adjust the consistency by adding more powdered sugar or lemon juice as needed.
  11. Stir in the lemon zest for extra flavor.
  12. Once the loaf has cooled completely, pour the glaze over the top, allowing it to drip down the sides.
  13. While wet, sprinkle additional lemon zest and place dried lemon slices and edible flowers to decorate the loaf. Let the glaze set for about 20 min.
  14. Cut into slices just before serving, and enjoy!
