Ingredients (serves 8-10 people):
3 cups old-fashioned oats
1/2 cup brown sugar (you can adjust according to your sweetness preference)
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
2 cups milk (dairy or plant-based)
2 large eggs
1/4 cup unsalted butter, melted
2 tsp vanilla extract
1 cup fresh blueberries
1 cup fresh raspberries
1/2 cup chopped walnuts
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.
In a large mixing bowl, combine the old-fashioned oats, brown sugar, baking powder, ground cinnamon, and salt. Stir until well mixed.
In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined.
Gently fold in the fresh blueberries and raspberries into the oatmeal mixture until evenly distributed.
Pour the mixture into the prepared 9x13-inch baking dish, spreading it out evenly.
Sprinkle the chopped walnuts evenly over the top of the oatmeal mixture.
Bake for 35-40 min. or until the oatmeal is set and the top is lightly golden brown.
