Breakfast Pizza
A more casual meal to celebrate Mother’s Day calls for a homemade breakfast pizza. Feel free to substitute with your favorite toppings, but this vibrant and creamy flavor combination will quickly become your new go-to for any pizza night!
Ingredients (for about 8 servings):
For the dough:
- 2 1/4 tsp(1 packet) active dry yeast
- 1 1/2 cups warm water (110°F/45°C)
- 1 tbsp honey
- 3 1/2 cups all-purpose flour
- 2 tbsp olive oil
- 1 tsp salt
For the toppings:
- 8 slices of bacon, cooked and crumbled
- 2 cups fresh baby spinach leaves
- 8 oz fresh mozzarella balls (bocconcini), sliced or torn into pieces
- 8 large eggs
- Salt and black pepper, to taste
- Crushed red pepper flakes (optional, for extra heat)
- Fresh basil leaves, thinly sliced (for garnish)
Instructions:
- In a small bowl, combine the warm water, honey, and yeast. Let it sit for about 5-10 min. or until the mixture becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Stir the mixture until a dough forms, then transfer it to a floured surface.
- Knead the dough for about 5-7 min. or until it becomes smooth and elastic. Shape the dough into a ball.
- Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to preheat as well.
- Once the dough has risen, punch it down and transfer it to a lightly floured surface.
- Roll out the dough into a large circle or rectangle, about 1/4 inch thick, to fit your baking sheet or pizza stone.
- Transfer the rolled-out dough to a lightly greased baking sheet or pizza stone.
- Spread the cooked and crumbled bacon evenly over the dough, sprinkle the fresh baby spinach leaves over the bacon, and then arrange the fresh mozzarella balls evenly on top of the spinach.
- Carefully crack each egg onto the pizza, spacing them evenly apart.
- Season the eggs with salt, black pepper, and crushed red pepper flakes, if desired.
- Bake the pizza for 10-12 min. or until the crust is golden brown and the egg whites are set but the yolks are still runny.
- Remove the pizza from the oven and let it cool slightly and garnish with thinly sliced fresh basil leaves.
- Slice the breakfast pizza into 8 slices and serve immediately. Enjoy!
