Cinnamon Rolls with Vanilla Glaze
Fluffy cinnamon rolls are a delicious staple item that belongs on any brunch menu. While it may not be the simplest recipe on this list, it might just be Mom’s favorite!
Ingredients (for 9 rolls):
For the rolls:
- 2 and 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp salt
- 1 package (2 and 1/4 tsp) active dry yeast
- 1/2 cup whole milk
- 1/4 cup unsalted butter
- 1 large egg
- 1/4 cup warm water (about 110°F)
For the filling:
- 1/2 cup packed brown sugar
- 2 tbsp ground cinnamon
- 1/4 cup unsalted butter, softened
For the icing:
- 1 cup powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
Instructions:
- In a large mixing bowl, combine 2 cups of flour, granulated sugar, salt, and yeast.
- In a saucepan, heat the milk and butter until warm (about 110°F), stirring to melt the butter. Remove from heat.
- Add the warm milk mixture and egg to the dry ingredients. Beat with an electric mixer on low speed for 30 seconds, scraping the bowl constantly. Then beat on high speed for 3 min.
- Stir in the remaining flour gradually to form a soft dough.
- Turn the dough out onto a lightly floured surface and knead it until it's smooth and elastic, about 6-8 min.
- Place the dough in a greased bowl, turning once to grease the top. Cover and let it rise in a warm place until doubled, about 1 hour. Prepare the filling while the dough is resting.
- In a small bowl, mix together the brown sugar and cinnamon.
- Punch down the risen dough and turn it out onto a floured surface. Roll it into a 12x9-inch rectangle.
- Spread the softened butter over the dough and sprinkle the cinnamon-sugar mixture evenly on top.
- Starting from one of the long sides, tightly roll up the dough into a log.
- Cut the log into 9 equal pieces using a sharp knife or dental floss.
- Place the rolls into a greased 9x9-inch baking pan, leaving a little space between each roll.
- Cover the rolls and let them rise in a warm place until doubled, about 30-45 min.
- Preheat your oven to 375°F (190°C).
- Once the rolls have risen, bake for 20-25 min. or until golden brown.
- While the rolls are baking, prepare the icing by mixing together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Allow the rolls to cool for a few minutes after removing them from the oven.
- Drizzle the icing over the warm rolls. Serve warm, and enjoy!
