Zucchini Friters
This zucchini fritter recipe is so delicious that you won’t even realize it’s packed with vitamins, antioxidants, and fiber! Pair it with a sauce inspired by Mediterranean flavors, and it will be an instant favorite on Mother's Day.
Ingredients (for 6-8 fritters):
For the fritters:
- 2 medium zucchinis, grated
- 1 tsp salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley, dill, or basil)
- 2 cloves garlic, minced
- 1 large egg, beaten
- 2 tbsp olive oil (for frying)
- Black pepper, to taste
For the sauce:
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Fresh chopped parsley or dill, for garnish (optional)
Instructions:
For the sauce:
- In a small bowl, combine the plain Greek yogurt, minced garlic, lemon juice, salt, and pepper. Stir until well mixed.
- Taste and adjust the seasoning, adding more salt or lemon juice if desired.
- Cover the sauce and refrigerate until ready to serve.
For the fritters:
- Grate the zucchini using a box grater or food processor.
- Place the grated zucchini in a colander set over a bowl and sprinkle with salt. Let it sit for about 10-15 min. to draw out excess moisture.
- After 15 min. squeeze the grated zucchini with your hands to remove as much liquid as possible. Transfer the squeezed zucchini to a clean kitchen towel and squeeze again to remove any remaining liquid.
- In a large mixing bowl, combine the grated zucchini, all-purpose flour, grated Parmesan cheese, chopped fresh herbs, minced garlic, beaten egg, and freshly ground black pepper. Stir until all the ingredients are well combined.
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, scoop about 2 tbsp of the zucchini mixture and form it into a patty. Place the patty in the skillet and flatten it slightly with a spatula. Repeat with the remaining zucchini mixture, leaving some space between each fritter in the skillet.
- Cook the fritters for about 3-4 min. on each side, or until golden brown and crisp. You may need to work in batches depending on the size of your skillet.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Arrange the pan-fried zucchini fritters on a serving platter.
- Serve the fritters warm with the garlic yogurt sauce on the side for dipping.
- Garnish with fresh chopped parsley or dill, and enjoy!
