Ingredients (for about 8 crepes):
1 cup all-purpose flour
2 tbsp matcha powder
2 tbsp granulated sugar
1/4 tsp salt
3 large eggs
1 1/4 cups milk
2 tbsp unsalted butter, melted
Additional butter or oil for cooking
Instructions:
In a large mixing bowl, whisk together the all-purpose flour, matcha powder, granulated sugar, and salt until well combined.
In a separate bowl, beat the eggs, then whisk in the milk and melted butter until smooth.
Gradually pour the wet ingredients into the dry ingredients while whisking continuously until you have a smooth, lump-free batter. Let the batter rest for about 10-15 min.
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
Pour about 1/4 cup of the batter into the center of the skillet, then quickly tilt and rotate the pan to spread the batter evenly into a thin circle.
Cook the crepe for about 1-2 min. or until the edges lift slightly and the bottom is lightly golden brown.
Carefully flip the crepe using a spatula and cook for an additional 1-2 min. on the other side.
Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining crepes. Repeat the process with the remaining batter.
