Matcha Crepes

The bittersweet notes in these light and airy matcha crepes are a fun twist on a French classic. Fill your crepe with your favorite toppings or feast on a sky-high stack to yourself. No matter how you choose to indulge, try adding chopped nuts, raspberries, and honey for the perfect flavor combo!

Ingredients (for about 8 crepes):

  • 1 cup all-purpose flour
  • 2 tbsp matcha powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 3 large eggs
  • 1 1/4 cups milk
  • 2 tbsp unsalted butter, melted
  • Additional butter or oil for cooking

Instructions:

  1. In a large mixing bowl, whisk together the all-purpose flour, matcha powder, granulated sugar, and salt until well combined.
  2. In a separate bowl, beat the eggs, then whisk in the milk and melted butter until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients while whisking continuously until you have a smooth, lump-free batter. Let the batter rest for about 10-15 min.
  4. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
  5. Pour about 1/4 cup of the batter into the center of the skillet, then quickly tilt and rotate the pan to spread the batter evenly into a thin circle.
  6. Cook the crepe for about 1-2 min. or until the edges lift slightly and the bottom is lightly golden brown.
  7. Carefully flip the crepe using a spatula and cook for an additional 1-2 min. on the other side.
  8. Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining crepes. Repeat the process with the remaining batter.
  9. Once all the crepes are cooked, serve them warm with your choice of toppings or fillings. Enjoy!
