Start summer off on the right foot with a delicious chopped salad chock full of vitamins and antioxidants! Pair it with a homemade açai dressing for a tangy and refreshing summer salad. It might just become a new staple on your table all summer long. Try pairing it with chicken, salmon, or tofu from the grill!
Ingredients (for 6-8 people):
For the Salad:
4 cups kale, stems removed and finely chopped
2 cups red cabbage, thinly sliced
1/2 cup slivered almonds
2 tbsp hemp seeds
2 tbsp chia seeds
2 tbsp ground flax seeds
For the Dressing:
1/2 cup fresh raspberries
1 tbsp acai powder
2 tbsp apple cider vinegar
1 tbsp honey or maple syrup
1/4 cup extra virgin olive oil
Salt and pepper to taste
Instructions:
In a large mixing bowl, combine the chopped kale, thinly sliced red cabbage, and slivered almonds.
In a blender or food processor, combine the fresh raspberries, acai powder, apple cider vinegar, honey or maple syrup, and a pinch of salt and pepper and blend until smooth.
While the blender is running, slowly drizzle in the extra virgin olive oil until the dressing is emulsified.
Pour the raspberry acai dressing over the kale, red cabbage, and almonds in the mixing bowl.
Toss the salad until everything is evenly coated with the dressing and transfer into a serving bowl.
Sprinkle with hemp seeds, chia seeds, and ground flax seeds for an extra boost of nutrition and texture.
