Venezuelan Cachapas

Cachapas are a beloved Venezuelan specialty made from fresh corn batter. These sweet and savory corn pancakes are known for their golden, slightly crispy exterior and soft interior. Cachapas are usually served with a slice of soft cheese or folded over with a melted cheese filling. Ingredients (for 6-8 cachapas):

  • 2 cups fresh corn kernels (from about 3-4 ears of corn) or thawed frozen corn
  • 1/2 cup milk
  • 1/4 cup cornmeal
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 large egg
  • 2 tbsp butter, melted
  • Butter or oil for cooking
  • Queso de mano, mozzarella, or any soft cheese for serving

Instructions:

  1. In a blender or food processor, combine the fresh corn kernels, milk, cornmeal, sugar, salt, egg, and melted butter.
  2. Blend until you have a slightly chunky batter. You want some texture from the corn kernels.
  3. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake, spreading it out gently with the back of a spoon to form a round pancake about 4-5 inches in diameter.
  5. Cook for about 3-4 min. on each side, or until the edges are golden brown and the center is cooked through.
  6. Serve the cachapas hot with slices of soft cheese on top. Fold over the pancake, allowing the cheese to melt from the heat. Enjoy!
