Ingredients (for 10-12 tiganites):
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 tbsp sugar
1 large egg
3/4 cup milk
1/2 tsp vanilla extract
Butter or oil for cooking
Honey for drizzling
Ground cinnamon (optional) for garnish
Instructions:
In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
In another bowl, beat the egg and then whisk in the milk and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
Drop tbsp-sized portions of batter onto the skillet to form small pancakes about 1.5 inches in diameter.
Cook for about 1-2 min. until bubbles form on the surface and the edges start to look set.
Flip the pancakes and cook for another 1-2 min. until golden brown and cooked through.
Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Arrange the pancakes on a plate and drizzle generously with honey.
