Raggmunk is a traditional Swedish pancake that's a perfect combination of two iconic foods; potatoes and pancakes. This savory dish is made from grated potatoes and fried until golden, giving the perfect texture—and flavor! For an authentic experience, try serving these pancakes with lingonberry sauce and bacon!
Ingredients(for 6-8 pancakes):
1 lb potatoes, peeled and grated
1 cup milk
1/2 cup all-purpose flour
1 large egg
1/2 tsp salt
Butter or oil for frying
Lingonberry sauce (optional, for serving)
Fried pork or bacon (optional, for serving)
Instructions:
In a large bowl, whisk together the milk, flour, egg, and salt until smooth.
Add the grated potatoes to the batter and mix until well combined.
Heat a tbsp of butter or oil in a large skillet over medium-high heat.
Spoon about 1/4 cup of the potato mixture into the skillet for each pancake, spreading it out into a thin round (about 3-4 inches in diameter).
Fry for about 3-4 min. on each side, or until the pancakes are golden brown and crispy. Add more butter or oil as needed for frying additional batches.
