Gozleme, or the Turkish pancake, is made from a thinly rolled dough rather than a batter. While it's not a traditional pancake, you can find this popular street food advertised as such across Turkey! Feta and spinach are a popular flavor combination, but you can also find them stuffed with other savory fillings like potatoes, cheese, and meat. Enjoy it with a cup of Turkish tea for an authentic experience!
Ingredients (for 1 pancake, serves 1-3 people):
For the Dough:
1 cup all-purpose flour
1/4 tsp salt
1/4 cup water, plus more if needed
1 tsp olive oil
For the Filling:
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1 small onion, finely chopped
1 clove garlic, minced
Salt and pepper to taste
1 tbsp olive oil
For Cooking:
1-2 tbsp butter or olive oil
Instructions:
In a mixing bowl, combine the flour and salt.
Make a well in the center and add the water and olive oil. Mix until the dough comes together.
Knead the dough on a lightly floured surface for about 5 min. or until smooth and elastic.
Cover the dough with a damp cloth and let it rest for about 30 min.
Heat 1 tsp of olive oil in a skillet over medium heat.
Add the chopped onion and cook until softened and translucent, about 3-4 min.
Add the minced garlic and cook for another minute.
Add the chopped spinach and cook until wilted, about 2-3 min. Season with salt and pepper to taste.
Remove from heat and let the mixture cool slightly and stir in the crumbled feta cheese.
On a lightly floured surface, roll out the dough into a large, thin circle or rectangle, about 12-14 inches in diameter.
Spread the filling evenly over half of the dough, leaving a small border around the edges.
Fold the other half of the dough over the filling and press the edges to seal.
Heat a large skillet or griddle over medium heat and add 1 tbsp of butter or olive oil.
Carefully place the gozleme in the skillet and cook for about 3-4 min. on each side, until golden brown and crispy.
