Treat Dad to a classic bistro favorite with this traditional rosemary steak-frites recipe. This dish features a perfectly cooked steak infused with aromatic rosemary, garlic, and butter, paired with crispy homemade fries. It's a simple yet indulgent meal that brings gourmet flavors to your Father’s Day dinner!
Ingredients (for 2 people):
2 8-oz ribeyes or sirloin steaks
2 sprig fresh rosemary
2 clove garlic, smashed
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
4 medium russet potatoes
3 cups vegetable oil (for frying)
Salt, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Peel and cut the potatoes into thin, even sticks (about 1/4 inch thick).
Soak the cut potatoes in cold water for at least 30 min. to remove excess starch. Drain and pat dry with paper towels.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Fry the potatoes in batches until golden and crispy, about 4-5 min. per batch.
Remove with a slotted spoon and drain on paper towels. Season with salt while hot.
Season the steak generously with salt and pepper on both sides.
In a skillet over medium-high heat, heat the olive oil until shimmering. Add the rosemary sprig and smashed garlic clove to the skillet.
Place the steak in the skillet and cook for about 3-4 min. on each side for medium-rare, or until desired doneness.
In the last minute of cooking, add butter to the skillet and baste the steak with the melted butter using a spoon. Remove the steak from the skillet and let it rest for a few minutes before slicing.
Place the steak on a serving plate and arrange the homemade fries alongside.
