Shrimp Scampi

Take Dad’s dinner to the next level with this elegant homemade shrimp scampi, made with succulent shrimp sautéed in a garlic butter sauce and a hint of white wine and lemon. This dish is served over a bed of tender pasta, making it a flavorful meal that’s perfect for celebrating with the whole family!

Ingredients:

  • 1.5 lb large shrimp, peeled and deveined
  • 12 oz spaghetti or linguine
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Freshly grated Parmesan cheese (optional)
  • Lemon wedges, for serving

Instructions:

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente.
  2. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  3. In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbling. Add the minced garlic and cook for about 1 min. or until fragrant.
  4. Add the shrimp to the skillet, and season with salt, pepper, and red pepper flakes (if desired).
  5. Cook the shrimp for 2-3 min. on each side, until pink and opaque. Remove the shrimp from the skillet and set aside.
  6. Pour the white wine into the skillet, stirring to deglaze the pan, and scrape up any browned remnants.
  7. Let the wine simmer for about 2 min. or until reduced by half. Add the lemon juice and lemon zest, stirring to combine.
  8. Return the cooked shrimp to the skillet and toss to coat in the sauce.
  9. Add the cooked pasta to the skillet, tossing to combine with the shrimp and sauce. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  10. Stir in the chopped parsley and adjust the seasoning with salt and pepper, to taste.
  11. Divide the shrimp scampi and pasta among four plates. Garnish with lemon wedges and freshly grated Parmesan cheese, if desired.
  12. Serve immediately, and enjoy!
