Celebrate Father’s Day with a deliciously comforting and super simple skillet chicken parmesan gnocchi. Juicy chicken pieces, chewy gnocchi, and a rich tomato sauce are topped with melted mozzarella and fresh basil. This easy-to-make dish is perfect for a comforting dinner for two, or you can double the recipe to satisfy the whole family!
Ingredients (for 2 people):
2 medium chicken breasts
Salt and pepper, to taste
1/4 cup all-purpose flour
1 egg, beaten
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 package (about 16 oz) potato gnocchi
1 cup marinara sauce (store-bought or homemade)
1 cup shredded mozzarella cheese
1/4 cup fresh basil leaves, chopped
Instructions:
Season the chicken breasts with salt and pepper. Lightly dust the chicken in flour, shaking off any excess.
Dip the floured chicken into the beaten egg, then coat with the breadcrumbs mixed with grated Parmesan cheese.
In a large skillet, heat olive oil over medium-high heat.
Cook the chicken breasts for about 7-8 min. per side or until golden brown and cooked through. Remove from skillet and set aside.
Bring a pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the surface (about 2-3 min.) Drain the gnocchi and set aside.
In the same skillet used for the chicken, add the marinara sauce and bring to a simmer over medium heat.
Add the cooked gnocchi to the skillet and stir to coat with the sauce.
Return the cooked chicken breasts to the skillet, placing them on top of the gnocchi.
Sprinkle the shredded mozzarella cheese evenly over the chicken and gnocchi.
Cover the skillet and cook for about 5 min. or until the cheese is melted and bubbly.
Remove from heat and garnish with fresh basil leaves. Serve immediately, and enjoy!
