Chicken Pot Pie

Bring the comfort and warmth to your dinner table that Dad brings to your life! These individual pies are filled with tender chicken, carrots, and peas in a creamy, savory sauce, and topped with a flaky, golden pastry crust. Perfect for a cozy family gathering, these pot pies make a hearty and delicious meal that is easy enough to add to your weekly repertoire!

Ingredients (for 4 individual pies):

  • 2 medium chicken breasts, cooked and diced
  • 2 cups carrots, diced
  • 2 cups peas (fresh or frozen)
  • 1 cup onion, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions:

  1. In a medium pot, cook the diced carrots in boiling water for about 5 min. until tender. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 5 min.
  3. Stir in the flour and cook for about 1-2 min. to create a roux.
  4. Gradually add the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer.
  5. Add the heavy cream, thyme, and parsley. Cook for another 2 min. until the sauce thickens.
  6. Stir in the cooked chicken, carrots, and peas. Season with salt and pepper to taste. Remove from heat and let the filling cool slightly.
  7. Preheat the oven to 400°F (200°C).
  8. Divide the filling evenly into four individual oven-safe ramekins.
  9. Roll out the puff pastry on a lightly floured surface and cut out four circles, each slightly larger than the ramekins.
  10. Place the puff pastry over the filling in each ramekin, pressing the edges to seal. Trim any excess pastry.
  11. Cut a small slit in the center of each pastry to allow steam to escape.
  12. Brush the top of each pastry with beaten egg to give the crust a golden color.
  13. Place the ramekins on a baking sheet to catch any drips.
  14. Bake in the preheated oven for 20-25 min. or until the pastry is golden brown and the filling is bubbling.
  15. Remove from the oven and let the pot pies cool slightly before serving. Enjoy!
