Italian Focaccia

This easy Italian focaccia is a delightful, no-knead bread that features a topping of juicy cherry tomatoes, briny olives, and fragrant rosemary. The dough requires minimal effort, just a bit of time to rise, making it perfect for preparing ahead. Ingredients (for 10-12 servings):

  • 2 ¼ tsp (1 packet) active dry yeast
  • 2 tsp honey
  • 2 ½ cups warm water (110°F)
  • 5 cups all-purpose flour
  • 1 tbsp kosher salt
  • 6 tbsp extra-virgin olive oil, divided
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted olives, halved
  • Fresh rosemary sprigs
  • Flaky sea salt

Instructions:

  1. In a large bowl, whisk together the yeast, honey, and warm water. Let sit for 5 min. until foamy.
  2. Add the flour and kosher salt, mixing with a wooden spoon until a shaggy dough forms.
  3. Pour 4 tbsp of olive oil into another large bowl. Transfer the dough to this bowl, turning to coat it in the oil. Cover with plastic wrap and refrigerate for at least 8 hours or up to 24 hours, until the dough has doubled in size and is bubbly.
  4. Generously butter a 13x9-inch baking pan. Pour 1 tbsp of olive oil into the center of the pan. Transfer the dough to the prepared pan, turning it to coat in oil.
  5. Use your fingers to dimple the dough, spreading it to the edges of the pan. Arrange the cherry tomatoes, olives, and rosemary sprigs on top, pressing them gently into the dough. Drizzle with the remaining tbsp of olive oil and sprinkle with flaky sea salt.
  6. Let the dough rise, uncovered, in a warm spot for 1 ½ to 4 hours, until it has doubled in size and is very puffy.
  7. Preheat the oven to 450°F. Bake the focaccia until golden brown and crisp, about 20-30 min.
  8. Remove from the oven and let cool slightly before slicing. Serve warm or at room temperature. Enjoy!
