Ingredients (for 6-8 biscuits):
2 cups all-purpose flour
1 tbsp baking powder
¼ tsp baking soda
2 tsp sugar
1 tsp salt
6 tbsp cold unsalted butter, cubed
¾ cup cold buttermilk, plus more for brushing
Instructions:
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
Add the cubed cold butter and cut it into the dry ingredients using a pastry cutter until you have pea-sized pieces of butter.
Pour in the cold buttermilk and gently mix until the dough starts to come together.
On a lightly floured surface, pat the dough into a rectangle and fold it into thirds. Repeat this folding process two more times.
Pat the dough down to 1/2-inch thickness and use a floured 2.5-inch biscuit cutter to cut out the biscuits. Arrange them on the prepared baking sheet so they touch each other.
