Matcha Chia Seed Pudding

No warm summer day is complete without a sweet treat that’s perfect for a healthy breakfast or afternoon snack! The creamy coconut milk pairs beautifully with the earthy matcha, creating a delicious and vibrant green pudding. This pudding is not only visually appealing but also packed with antioxidants and healthy fats! Easy to prepare and delightful to eat, it’s a great way to enjoy the benefits of matcha and chia seeds in one delicious dish.

Ingredients (for 2 servings):

  • 1 1/2 cups coconut milk (from a can or carton)
  • 1/4 cup chia seeds
  • 1 tbsp matcha powder
  • 1-2 tbsp maple syrup or honey (to taste)
  • 1/2 tsp vanilla extract
  • Fresh mint leaves, for garnish

Instructions:

  1. In a medium bowl, whisk together the coconut milk, matcha powder, maple syrup or honey, and vanilla extract until the matcha is fully dissolved and the mixture is smooth.
  2. Stir in the chia seeds until they are evenly distributed.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to absorb the liquid and the mixture to thicken. Stir the pudding once or twice during the first hour to prevent clumping.
  4. Divide the pudding into two serving bowls or glasses. Garnish with fresh mint leaves. Enjoy!
