Matcha Chia Seed Pudding
No warm summer day is complete without a sweet treat that’s perfect for a healthy breakfast or afternoon snack! The creamy coconut milk pairs beautifully with the earthy matcha, creating a delicious and vibrant green pudding. This pudding is not only visually appealing but also packed with antioxidants and healthy fats! Easy to prepare and delightful to eat, it’s a great way to enjoy the benefits of matcha and chia seeds in one delicious dish.
Ingredients (for 2 servings):
- 1 1/2 cups coconut milk (from a can or carton)
- 1/4 cup chia seeds
- 1 tbsp matcha powder
- 1-2 tbsp maple syrup or honey (to taste)
- 1/2 tsp vanilla extract
- Fresh mint leaves, for garnish
Instructions:
- In a medium bowl, whisk together the coconut milk, matcha powder, maple syrup or honey, and vanilla extract until the matcha is fully dissolved and the mixture is smooth.
- Stir in the chia seeds until they are evenly distributed.
- Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to absorb the liquid and the mixture to thicken. Stir the pudding once or twice during the first hour to prevent clumping.
- Divide the pudding into two serving bowls or glasses. Garnish with fresh mint leaves. Enjoy!
