Ingredients (for 2 servings):
1 1/2 cups coconut milk (from a can or carton)
1/4 cup chia seeds
1 tbsp matcha powder
1-2 tbsp maple syrup or honey (to taste)
1/2 tsp vanilla extract
Fresh mint leaves, for garnish
Instructions:
In a medium bowl, whisk together the coconut milk, matcha powder, maple syrup or honey, and vanilla extract until the matcha is fully dissolved and the mixture is smooth.
Stir in the chia seeds until they are evenly distributed.
Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to absorb the liquid and the mixture to thicken. Stir the pudding once or twice during the first hour to prevent clumping.
