Grilled Vegetable Flatbread

Ingredients (for 1 flatbread, or 2-4 servings):

For the Flatbread:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • 3/4 cup warm water

For the Toppings:

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup crumbled feta cheese (optional)
  • Balsamic glaze for drizzling (optional)

Instructions:

  1. In a large bowl, combine the flour, salt, and baking powder. Add the olive oil and warm water, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 min. until smooth and elastic. Cover with a damp cloth and let it rest for 30 min.
  3. Preheat your grill to medium-high heat.
  4. In a large bowl, toss the zucchini, yellow squash, red bell pepper, red onion, and cherry tomatoes with olive oil, salt, and pepper.
  5. Grill the vegetables for about 5-7 min. on each side until tender and slightly charred. Remove from the grill and set aside.
  6. Roll the rested dough into a large thin oval or round shape.
  7. Place the flatbread directly on the grill grates. Cook for 2-3 min. on each side until golden brown and slightly puffed.
  8. Remove the grilled flatbread from the grill and top with the grilled vegetables. Sprinkle with fresh basil leaves and crumbled feta cheese if desired.
  9. Drizzle with balsamic glaze if desired. Serve immediately and enjoy this delicious summer treat!
