Shrimp Ceviche

This combination of fresh seafood and citrusy produce served on crunchy tostadas create the perfect light and refreshing meal, ideal for warm weather. The ceviche, made with fresh shrimp marinated in a zesty blend of lime and lemon juices, is complemented by crunchy cucumber, juicy tomatoes, and a hint of heat from jalapeño. Easy to prepare and bursting with freshness, these tostadas are sure to be a hit for any occasion!

Ingredients (for 4 servings):

  • 1 lb raw shrimp, peeled, deveined, and chopped
  • 1 cup freshly squeezed lime juice (about 8-10 limes)
  • 1/2 cup freshly squeezed lemon juice (about 3-4 lemons)
  • 1/2 red onion, finely diced
  • 1 cucumber, peeled and diced
  • 1 cup cherry tomatoes, quartered
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 8 tostada shells
  • 1 lime, cut into wedges (for serving)

Instructions:

  1. Place the chopped shrimp in a large bowl. Pour the lime and lemon juices over the shrimp, making sure they are completely submerged. Cover and refrigerate for about 30 min. to 1 hour, until the shrimp turn opaque and are fully "cooked" by the citrus juices.
  2. Once the shrimp are ready, drain about half of the citrus juice from the bowl. Add the red onion, cucumber, cherry tomatoes, jalapeño, and cilantro to the shrimp. Mix well and season with salt and pepper to taste.
  3. Place the tostada shells on serving plates. Spoon a generous amount of shrimp ceviche onto each tostada shell.
  4. Garnish with lime wedges and extra cilantro if desired. Serve immediately, and enjoy!
