Grilled Scallop Skewers

Grilled scallop skewers are a easy yet elegant dish and perfect for any summer occasion! The scallops are lightly marinated with olive oil, salt, and pepper, allowing their simple yet remarkable flavor to shine through. Grilled to perfection, these scallop skewers are tender and perfectly complemented by the tangy freshness of lemon and the savory depth of soy sauce. This dish is quick to prepare and sure to impress, so be sure to try it at your next summer barbecue! 

Ingredients (for 4 skewers):

  • 20 large sea scallops
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lemon, cut into wedges
  • 1/4 cup soy sauce

Instructions:

  1. Rinse the scallops under cold water and pat them dry with paper towels. If necessary, remove the tough muscle from the side of each scallop.
  2. In a large bowl, toss the scallops with olive oil, salt, and pepper until evenly coated. Let them sit for 10-15 min. while you preheat the grill.
  3. Preheat your grill to medium-high heat (about 400°F).
  4. Thread 5 scallops onto each skewer, spacing them evenly.
  5. Place the skewers on the grill. Cook for about 2-3 min. per side, until the scallops are opaque and have nice grill marks. Avoid overcooking to keep them tender.
  6. Transfer the skewers to a serving platter. Serve immediately with fresh lemon wedges and soy sauce.Enjoy!
