This irresistible summer dip is the perfect way to make use of your leftover ears of corn, or make this delicious recipe even easier by using canned or frozen kernels you have on hand! Serve it chilled with tortilla chips or fresh vegetable sticks for a refreshing and satisfying treat that will have everyone coming back for more!
Ingredients (for 4-6 servings):
3 cups corn kernels (fresh, canned, or frozen)
1 cup sour cream
1 cup mayonnaise
1 cup shredded cheddar cheese
1/2 cup crumbled feta cheese
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1 jalapeño, seeded and finely chopped
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper, to taste
Tortilla chips or vegetable sticks, for serving
Instructions:
If using fresh corn, cook the kernels in boiling water for 3-4 min. until tender. If using frozen corn, thaw and drain. If using canned corn, drain well.
In a large bowl, combine the sour cream, mayonnaise, cheddar cheese, feta cheese, green onions, cilantro, jalapeño, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
Gently fold in the corn kernels until evenly distributed.
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to blend.
Transfer the dip to a serving bowl and serve with tortilla chips or vegetable sticks. Enjoy!
