Watermelon Coconut Bars

Watermelon Coconut Bars are a refreshing and delightful treat that perfectly combines the best flavors of summer in a unique way! The creamy and sweet coconut base pairs wonderfully with the light and fruity watermelon gelatin layer, creating a balanced and satisfying bite. Easy to prepare and visually appealing, these bars offer a cool and delicious way to enjoy the flavors of the season.

Ingredients (for 12 bars):

  • 2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract
  • 3 cups fresh watermelon juice (about 1 small watermelon, blended and strained)
  • 2 tbsp lemon juice
  • 2 tbsp sugar (adjust to taste)
  • 3 packets (3 tbsp) unflavored gelatin

Instructions:

  1. In a large bowl, mix the shredded coconut, sweetened condensed milk, coconut milk, and vanilla extract until well combined.
  2. Press the mixture evenly into the bottom of a parchment-lined 9x13 inch baking dish. Ensure the layer is firmly packed.
  3. Refrigerate while preparing the watermelon layer.
  4. In a small bowl, sprinkle the unflavored gelatin over 1 cup of the watermelon juice and let it sit for 5 min. to bloom.
  5. In a saucepan, combine the remaining 2 cups of watermelon juice, lemon juice, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.
  6. Add the bloomed gelatin mixture to the warm watermelon juice and stir until the gelatin is completely dissolved.
  7. Let the mixture cool slightly, then pour it over the chilled coconut layer in the baking dish.
  8. Refrigerate the layered mixture for at least 4 hours, or until the watermelon gelatin layer is fully set.
  9. Once set, remove the bars from the baking dish using the parchment paper overhang.
  10. Cut into 12 bars and serve chilled. Enjoy!

METHOD:

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.

  10. Enjoy!
