Chicken Salad Croissant Sandwich

There’s nothing better than a refreshing chicken salad sandwich by the pool! This creamy salad, highlighted by the sweetness of apples and cranberries and the peppery bite of arugula, is perfectly complemented by the buttery, flaky croissant. Easy to prepare and assemble, these sandwiches are an excellent choice for your upcoming summer parties!

Ingredients (for 6 sandwiches):

  • 3 cups cooked chicken breast, diced or shredded
  • 1 cup arugula, roughly chopped
  • 1 cup diced apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 6 large croissants, sliced in half
  • Whole arugula leaves

Instructions:

  1. In a large bowl, combine the diced chicken, chopped arugula, diced apples, dried cranberries, and diced red onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until everything is well coated. Adjust seasoning if needed.
  4. Place fresh arugula topped with a generous amount of the chicken salad on the bottom half of each croissant.
  5. Cover with the top half of the croissant.
  6. Serve immediately or wrap the sandwiches in parchment paper, refrigerate until ready to serve, and enjoy!

These salted caramel thumbprint cookies are easy to make and super delicious!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
