Lemon Shortbread Cookies

No summer day is complete without a refreshing citrus dessert! These lemon shortbread cookies are a delightful treat perfect for any occasion. Topped with tangy lemon icing and garnished with fresh lemon zest, these cookies are as visually appealing as they are delicious. Making a batch (or two!) of simple and delicious lemon cookies is the perfect way to keep your home stocked for pool parties all summer long!

Ingredients (for 24 cookies):

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • Zest of 2 lemons
  • 1 tsp vanilla extract

For the Icing:

  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice
  • Zest of 1 lemon (for garnish)

Instructions:

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the flour, salt, lemon zest, and vanilla extract. Mix until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Cut into desired shapes using cookie cutters.
  6. Place the cookies on the prepared baking sheet, and bake for 10-12 min. or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
  7. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency as needed.
  8. Once the cookies are cool, spread the icing over the top of each cookie. Sprinkle with additional lemon zest.
  9. Allow the icing to set before serving, and enjoy!

These salted caramel thumbprint cookies are easy to make and super delicious!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.

  10. Enjoy!
