Matcha Almond Brownies

Blondes really do have more fun! These matcha blondies are a unique twist on the classic blondie, combining the earthy, slightly bitter flavor of matcha green tea with the sweet, buttery richness of a traditional blondie.  These sweet treats are easy to make and perfect for serving poolside at your next party!

Ingredients (for 12 brownies):

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp matcha green tea powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips or cranberries (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
  3. Add the eggs and vanilla extract, and whisk until smooth.
  4. In a separate bowl, sift together the flour, matcha powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips or cranberries, if using.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake for 20-25 min. or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake, as blondies should be chewy.
  7. Allow the blondies to cool completely in the pan on a wire rack. Use the parchment paper overhang to lift the blondies out of the pan, cut into 12 squares, and enjoy!

These salted caramel thumbprint cookies are easy to make and super delicious!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
