Shrimp Tacos

Grilled shrimp tacos make a vibrant and flavorful meal that’s perfect for a summer gathering. Marinated in a zesty mix of lime juice, garlic, and spices, the shrimp are grilled to perfection and paired with fresh toppings like shredded red cabbage, diced red onion, cilantro, and creamy avocado. Drizzled with a tangy garlic-lime sauce, these tacos offer a delightful balance of textures and flavors. Easy to make and delicious, they are sure to be a hit at your next cookout!

Ingredients (for 4 tacos):

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving

For the Garlic-Lime Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. In a bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper. Add the shrimp and toss to coat. Let marinate for 15-20 min.
  2. In a small bowl, whisk together the mayonnaise, lime juice, minced garlic, salt, and pepper. Set aside.
  3. Preheat the grill to medium-high heat. Thread the shrimp onto skewers.
  4. Grill the shrimp for 2-3 min. per side, or until they are pink and opaque. Remove from the grill.
  5. Warm the tortillas on the grill for about 30 seconds per side.
  6. Fill each tortilla with grilled shrimp, shredded red cabbage, diced red onion, chopped cilantro, and avocado slices.
  7. Drizzle with the garlic-lime sauce and serve with lime wedges on the side. Enjoy!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
