Ingredients (for 9 servings):

For the Brownie Base:

  • 1 cup raw walnuts
  • 1 cup Medjool dates, pitted
  • 1/2 cup raw cacao powder
  • 1 tsp vanilla extract
  • 1/2 tsp ground cayenne pepper (adjust to taste)
  • 1/4 tsp sea salt

Mix-ins and Toppings:

  • 1/4 cup raw pistachios, roughly chopped
  • 1/4 cup goji berries
  • Extra pistachios and goji berries for topping

Instructions:

  1. In a food processor, blend the walnuts until finely ground.
  2. Add the pitted dates, raw cacao powder, vanilla extract, cayenne pepper, and sea salt. Process until the mixture becomes sticky and holds together when pressed.
  3. Add the roughly chopped pistachios and goji berries to the brownie mixture. Pulse a few times to combine evenly.
  4. Press the brownie mixture evenly into a 9x9-inch pan lined with parchment paper.
  5. Press extra pistachios and goji berries on top for decoration.
  6. Refrigerate the brownies for at least 1 hour to firm up.
