Tuna Poke Bowl
This tuna poke bowl is a vibrant and refreshing meal that combines fresh, marinated tuna with a variety of colorful vegetables. Served over a bed of fluffy white rice, the bowl features creamy avocado, crisp cucumber, and crunchy shredded cabbage, all topped with sesame seeds and green onions for an added burst of fresh summer flavor!
Ingredients (for 4 servings):
- 1 lb fresh tuna, diced
- 2 cups cooked white rice
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 cup shredded cabbage (red or green)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp grated ginger
- 1 garlic clove, minced
- 2 tbsp sesame seeds
- 2 green onions, chopped
- Optional: sriracha or spicy mayo for drizzling
Instructions:
- In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic. Add the diced tuna to the bowl and gently toss to coat. Let it marinate in the refrigerator for at least 15 min.
- Cook the white rice according to package instructions. Once cooked, let it cool slightly.
- Slice the avocado and cucumber, and shred the cabbage.
- Divide the cooked white rice into four bowls.
- Arrange the marinated tuna, avocado slices, cucumber slices, and shredded cabbage on top of the rice in each bowl.
- Sprinkle sesame seeds and chopped green onions over each bowl.
- If desired, drizzle with sriracha or spicy mayo for an extra kick, and enjoy!
