Ingredients (for 4 servings):
1½ lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 large onion, thinly sliced
8 small flour or corn tortillas
Lime wedges, for serving
Fresh cilantro, for garnish
Sour cream, guacamole, and salsa, for serving (optional)
Instructions:
In a large bowl, combine the shrimp, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Toss to coat the shrimp evenly and let it marinate for at least 15 min.
While the shrimp is marinating, heat a grill or grill pan over medium-high heat. Add the sliced red and green bell peppers and onion to the grill. Cook, turning occasionally, until the vegetables are tender and slightly charred, about 5-7 min. Remove from the grill and set aside.
Add the marinated shrimp to the grill in a single layer. Cook for 2-3 min on each side, or until the shrimp are opaque and cooked through.
While the shrimp are grilling, warm the tortillas on the grill for about 30 seconds on each side, or until warm and pliable.
Divide the grilled shrimp, bell peppers, and onions among the warm tortillas. Garnish with fresh cilantro and squeeze lime wedges over the top.
