This baked teriyaki salmon is a delicious and easy dish that combines tender, flaky salmon with a rich and savory homemade teriyaki sauce. The salmon is marinated to infuse it with flavor and then baked to perfection, resulting in a delightful blend of sweet and savory notes. Topped with sesame seeds and fresh green onions, this dish makes the perfect weeknight family dinner!
Ingredients:
1½ lb salmon fillets
1/3 cup soy sauce
1/4 cup brown sugar
1/4 cup mirin (or rice vinegar)
2 tbsp honey
1 tbsp grated fresh ginger
2 garlic cloves, minced
2 green onions, thinly sliced (plus extra for garnish)
1 tbsp sesame oil
1 tbsp cornstarch
1 tbsp water
Sesame seeds, for garnish
Lemon wedges, for serving
Instructions:
In a small saucepan, combine the soy sauce, brown sugar, mirin, honey, grated ginger, minced garlic, and sesame oil. Bring the mixture to a simmer over medium heat, stirring occasionally.
In a small bowl, mix the cornstarch and water to create a slurry. Add the slurry to the saucepan and continue to cook, stirring constantly, until the sauce thickens, about 2-3 min. Remove from heat and let it cool slightly.
Place the salmon fillets in a large resealable plastic bag or shallow dish. Pour half of the teriyaki sauce over the salmon, reserving the other half for later. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 min. and up to 2 hours.
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or foil. Remove the salmon from the marinade and place it on the prepared baking sheet. Discard the used marinade. Bake the salmon for 12-15 min. or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, warm the reserved teriyaki sauce. Drizzle the warm sauce over the baked salmon just before serving.
Sprinkle the salmon with sesame seeds and additional sliced green onions. Serve with lemon wedges on the side. Enjoy!
