Banana bread is a moist and delicious picnic essential that’s packed with ripe bananas and just the right amount of sweetness. If you’re ready to take it up a notch, adding crunchy walnuts makes this loaf a perfect addition to your next outdoor gathering!

Ingredients (for 1 loaf):

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas, mashed (about 1 1/2 cups)
  • 1/4 cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Stir in the mashed bananas, sour cream (or yogurt), and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 60-70 min. or until a toothpick inserted into the center comes out clean.
  10. Allow the banana bread to cool in the pan for about 10 min. then transfer it to a wire rack to cool completely.
