Ingredients (for 12 pieces):
2 large flour tortillas
4 oz cream cheese, softened
1 tbsp Dijon mustard
4 slices roast beef
4 slices turkey
4 slices cheddar cheese
4 slices Swiss cheese
1/2 cup baby spinach or lettuce leaves
Salt and black pepper to taste
Instructions:
In a small bowl, combine the softened cream cheese and Dijon mustard. Mix until well blended.
Lay one tortilla flat on a clean surface.
Spread half of the cream cheese mixture evenly over the tortilla.
Layer 2 slices of roast beef, 2 slices of turkey, 2 slices of cheddar cheese, and 2 slices of Swiss cheese on top of the cream cheese mixture.
Place half of the baby spinach or lettuce leaves evenly over the meats and cheeses. Season with a pinch of salt and black pepper.
Roll the tortilla tightly from one end to the other to form a log. Repeat the process with the second tortilla and the remaining ingredients.
Using a sharp knife, slice each rolled tortilla into 6 even pieces, yielding 12 pinwheels in total.
Arrange the pinwheels on a platter and serve immediately, or wrap them in plastic wrap and refrigerate until ready to serve. Enjoy!
