Loaded Potato Skins

Loaded potato skins are a tailgating classic—crispy, cheesy, and packed with flavor. These crispy potato halves are filled with melted cheese, smoky bacon, tangy sour cream, and fresh chives. This recipe yields about 8 potato skins, making it an easy and shareable snack for your next tailgate.

Ingredients (for 8 servings):

  • 4 medium russet potatoes, scrubbed clean
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh chives
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F. Prick each potato several times with a fork and rub with olive oil. Place the potatoes directly on the oven rack and bake for 50-60 min. or until tender.
  2. Let the potatoes cool slightly, then cut them in half lengthwise. Scoop out the center of each half, leaving about 1/4 inch of potato flesh on the skin.
  3. Brush the inside of each potato skin with olive oil and sprinkle with salt and pepper. Place them on a baking sheet, skin-side down, and bake for 10 min. to crisp up the skins.
  4. Remove the potato skins from the oven and sprinkle the insides with shredded cheddar cheese and crumbled bacon.
  5. Return to the oven and bake for another 5-7 min. or until the cheese is melted and bubbly.
  6. Remove from the oven and top each potato skin with a dollop of sour cream and a sprinkle of chopped chives.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
