Buffalo Chicken Dip

This creamy buffalo chicken dip brings the perfect balance of spice and cheese, making it a must-have at any tailgating event that everyone will love! As the ultimate tailgating crowd-pleaser, this simple snack is made with shredded chicken, tangy buffalo sauce, cream cheese, and melted cheddar. Better yet, it's topped with blue cheese crumbles for even more flavor! 

Ingredients (for 6-8 servings):

  • 2 cups shredded cooked chicken (rotisserie chicken works well)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (like Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles
  • Celery sticks, tortilla chips, or crackers for serving

Instructions:

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix together the shredded chicken, softened cream cheese, buffalo sauce, and ranch dressing until well combined.
  3. Transfer the mixture to an oven-safe dish and spread it out evenly. Top with shredded cheddar cheese.
  4. Bake for 20-25 min. or until the dip is hot and the cheese is melted and bubbly.
  5. Remove from the oven and sprinkle with blue cheese crumbles.
  6. Serve warm with celery sticks, tortilla chips, or crackers for dipping.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
