Brioche (France)

Brioche is a rich, buttery, and slightly sweet bread with a tender crumb and a golden, flaky crust. Often used for French toast, and sandwiches, or enjoyed on its own, this luxurious bread melts in your mouth with each bite. Its versatility and indulgent flavor make it a staple in French bakeries and kitchens, perfect for both sweet and savory pairings.

Ingredients (for 1 loaf, or 10-12 slices):

  • 3½ cups all-purpose flour
  • ¼ cup sugar
  • 1 packet (2¼ tsp) active dry yeast
  • 1 tsp salt
  • 4 large eggs
  • ½ cup whole milk, warm
  • 1 cup unsalted butter, softened and cut into small pieces
  • 1 egg (for egg wash)

Instructions:

  1. In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for 5-10 min. until foamy.
  2. In a large bowl or stand mixer, combine the flour and salt. Add the yeast mixture and eggs, mixing until a dough forms. Gradually add the softened butter, a few pieces at a time, kneading until the dough becomes smooth and elastic (about 10-15 min. by hand or in a stand mixer with a dough hook).
  3. Transfer the dough to a greased bowl, cover with a clean towel, and let it rise in a warm place for 1½-2 hours until doubled in size.
  4. Punch down the dough and shape it into a loaf. You can also divide the dough into small balls and arrange them in a loaf pan for a pull-apart style. Place the dough in a greased loaf pan, cover, and let it rise again for about 1 hour.
  5. Preheat your oven to 350°F (175°C). Beat the remaining egg with a splash of water, then gently brush the top of the loaf with the egg wash for a shiny, golden finish.
  6. Bake for 30-35 min., or until the brioche is golden brown and sounds hollow when tapped on the bottom. If the top is browning too quickly, cover it with foil in the last 10 min. of baking.
  7. Allow the brioche to cool on a wire rack before slicing. Enjoy it on its own, as French toast, or as the base for decadent sandwiches.
